Tomato-Basil Polenta Squares

01Bring the vegetable broth to a boil and slowly add in the polenta. Simmer and stir frequently for 10-15 minutes until thickened. 2. Stir in the yeast, olive oil, garlic powder, salt, and pepper. 3. Pour into a parchment-lined 8x8 dish, and chill for 1 hour or until firm. 4. Cut into 6 squares and top each with halved cherry tomatoes. 5. Transfer squares to a baking sheet and bake at 400° for 15-20 minutes until golden. 6. Top with basil and serve warm.
